Ingredients:
Sugar Cookie Dough:
2/3 cup sugar
1/2 cup oil
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
2 teaspoons baking powder
Apple Pie Filling:
2 large apples (gala or granny smith)
1/4 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon allspice
2 tablespoons flour
Juice of 1 lemon
Directions:
1. Peel and dice apples.
2. Combine diced apples with brown sugar, cinnamon, allspice, flour and lemon.
3. Place diced apples in a sauce pan with margarine and cook until apples are softened.
4. Cream together sugar, oil, eggs and vanilla.
5. Slowly add flour and baking powder. Mix together. The dough might be crumbly, use your hands to smooth it out and combine it. (if the dough is sticky add an additional 1/4 cup flour)
6. Roll dough out on floured surface (about 1/4 to 1/8 thick. Not too thick since then the circles are hard to shape and will open up. Not too thin since then it will rip when shaping or filling)
7. Cut circles out using a donut cutter, cookie cutter or the rim of a large glass cup or mason jar.
8. Fill center with apple pie filling
9. Cut out thin strips of dough to place over circles, like a pie.
10. Bake on 350′ for 10 to 12 minutes depending on how soft or crispy you want them. I like them super soft so I take them out at about 10 minutes.
11. Top with powdered sugar.
